Concepts
Restaurants and bars are nothing without a defining concept to bind all the separate elements, such as interior design, music and, of course, cuisine together. We pride ourselves on allowing owners and managers to clarify their concepts, getting them to focus and hone disparate ideas into a well laid foundation. 
 
Hotels may have several different F&B concepts within one venue, all of which need particular attention and management. YKT can offer consultation on concept development, including design and layout, and also carry out location specific market research to help you find market trends and market gaps. 

 
Menu development
YKT is happy offer our services for your bars: to devise, create and cost bespoke alcohol, wine and cocktail menus that adhere to agreed upon concepts. These menu's will be written in consideration of the relevant cuisine of a restaurant or F&B outlet, and will incorporate the company's preferred brand and supplier partnerships, as well as domestic supply and seasonality.  YKT can advise in the creation of a balanced wine list that reflects both the bar and restaurant concept, as well as the location.
 
While most hotels have Culinary development teams in place, YKT is can also offer consultation on the food side as well, and we have a wide array of associate chefs from a diverse range of world cuisines at our (and your) disposal. 

 
Training
Ultimately all the above is in the hands of those who actually work in the venues. Even the best concepts and menu will succeed or fail depending on how they are sold. YKT has a well tested system for training both managers and their staff (both bar and floor), providing them with the best tools and knowledge to deliver the highest standards of service, as customers would expect of your brands. Our training also includes sales and product knowledge, as well as service. 
 
YKT will also put in place a training system, for both managers and staff, so that new members of staff can be inducted into the system and brought up to required standard at optimal speed. We also provide management and staff handbooks, written in accordance with the brand guidelines. 

 
Opening
Openings can often be rather stressful, to say the least... YKT's service includes being on hand for those first vital days, helping where necessary to get things running smoothly and up to speed as quickly and efficiently – and as calmly! - as possible. 
 
We also realise that the work is not finished once the doors are open. We believe that things should be checked, double checked, and then checked again. We come back as many times as you require, to test standards, and if necessary budgets... To re-train here, to change a recipe there, whatever is necessary to keep the business moving forward in the right direction.
